Avli's Mousaka
Recipe
Ingredients
- 1 kg eggplants
- 1kg zucchini
- Parsley, spearmint
- Salt, pepper
- Grated Cretan Gruyere cheese (or any other hard salted cheese)
- Ingredients for the minced meat sauce
- 700 gr minced meat (lamb meat)
- 2 onions
- ½ glass of wine
- 2 Bay leaves
- 2 Cloves
- 1 stick Cinnamon
- 1 can (200gr) cut tomatoes
- Ingredients for the Yoghurt Sauce
- 700gr Yoghurt
- 4 eggs
Step 1
Clean, wash and slice the eggplants and zucchini
Fry them in Olive oil, place on kitchen paper so that oil can be absorbed
Step 2
Chop onions (finely) and sauté together with meat (no oil), until all juices are gone
Place the herbs and olive oil
Pour the wine, and then the tomato
Cook until done. Place in a bowl through a shift so that all liquids are not in the mixture. Place aside
Step 3
Whisk the yoghurt in a bowl, spearmint (finely chopped), eggs and 100gr of the cheese together
with 2 spoonfuls of olive oil. Blend together (do not use a blended, only a whisk)
Last step
In a pan, layer the fried slicers of eggplant and zucchini, then the meat, then the grated cheese.
Repeat until all items are used in layer by layer.
Finish by pouring yoghurt sauce and sprinkle grated cheese on top
Place in oven (200 C) until top browns. Take out of oven and wait for a minimum of ½ hour
before cutting in pies to serve. You may serve it with freshly grated tomato on the side or Feta
cheese.
